Should a curry be HOT?

I tried the chutney last night with some left over chicken, it will get a proper outing with a curry later. A few days has tamed it and improved the flavour.
Elwyman - We have a similar introduction to Indian food, my Father was also sent to India after the war in Europe ended. He was in the Parachute Regiment and part of the first mobilisation for the preparations of the invasion of Japan which never happened and he ended up in Java. He would make lamb curry on a regular basis, I grew up on it (y)

I'm glad you found it favourable, it does improve with time, just remember this is a West Indian recipe & not a recipe from India. Hope you enjoy. (y)

It works for any food, talking of Caribbean food - Encona sauce, a permanent fixture in the kitchen.

Curious question, what becomes of the rest of your Christmas roast? Doing a lamb Biryani with my leg of lamb remains...
